Ingredients:
1 pound corn, fresh or frozen
1 large red bell pepper, chopped
1 avocado, ripe but not mushy
12 ounce tri tip
DRESSING
1/2 cup E&V Key Lime Tangerine Chili Marinade & Dressing
1/4 cup extra virgin olive oil
1 ripe avocado
Salt & pepper
Preparation & Cooking Instructions:
Boil corn in a pot of lightly salted water until tender, drain and cool. Toss corn, bell pepper and one sliced avocado together. Season steak with salt and pepper and grill to desired doneness. While steak is cooking blend dressing ingredients until smooth. Plate corn mixture and top with sliced steak and spicy avocado dressing. Serves 4
Tressa's Tip: Substitute chicken or a firm white fish in place of the red meat if preferred.
