BACON, EGG & ASPARAGUS (Red Bell Pepper Ancho Chili Jam)
Ingredients: 2 eggs 4 slices bacon, cooked 1 ciabatta roll, cut in half lengthwise 2 tablespoons butter or olive oil 6 asparagus spears, baked or steamed ½ cup E&V Red Bell Pepper Ancho Chili Jam
Preparation & Cooking Instructions: With a biscuit cutter, cut a hole out of center of both sides of bread. Heat butter or olive oil in a skillet over medium heat, place bread slices skillet and crack eggs in each bread hole. Cook eggs to desired doneness, plate with bacon, asparagus and E&V Red Bell Pepper Ancho Chili Jam on the side. Serves 2
